Dried fruits, of all kinds, are delicacies in the Middle East and eastern Asia.

In Japan, there is a tradition of picking ripe Hachiya persimmons in the winter: they are carefully peeled, tied up in strings, and allowed to dry for a week. Then they are giving a daily massage until the desired consistency is achieved. We decided to honor this tradition. And also to let them hang in our open kitchen for everyone to see, almost like bright orange lights in winter darkness. Used in desserts, they are a sweet seasonal surprise when cut or shaved thinly.
